{"id":5091,"date":"2019-01-29T14:03:37","date_gmt":"2019-01-29T14:03:37","guid":{"rendered":"https:\/\/www.shakkei.at\/?p=5091"},"modified":"2019-01-29T14:03:37","modified_gmt":"2019-01-29T14:03:37","slug":"chinesisches-neujahr","status":"publish","type":"post","link":"https:\/\/www.shakkei.at\/de\/blog\/chinesisches-neujahr\/","title":{"rendered":"Chinesisches Neujahr"},"content":{"rendered":"<p>Das chinesische Neujahr steht wieder einmal vor der T\u00fcre und da ich mich im Moment sehr mit Ikigai besch\u00e4ftige (Artikel folgt bald) m\u00f6chte ich das Hier und Jetzt feiern. Zu diesem besonderen Anlass wage ich mich an einen kulinarischen Klassiker der gef\u00fcllten Teigtasche oder auch Jiaozi genannt.<\/p>\n<p>Eine der Legenden um die Entstehungsgeschichte dieser kleinen K\u00f6stlichkeit\u00a0 geht zur\u00fcck auf den Arzt Bian Que, der vor 2500 Jahren lebte. Da in Nordchina die Bev\u00f6lkerung oft an Erfrierungen litt, \u201everschrieb\u201c er den Patienten spezielle Kr\u00e4uter, die er in einen d\u00fcnnen Nudelteig verpackte, um sie so leichter transportf\u00e4hig zu machen.<\/p>\n<p><a href=\"https:\/\/de.wikipedia.org\/wiki\/Jiaozi\">https:\/\/de.wikipedia.org\/wiki\/Jiaozi<\/a><\/p>\n<p>Ganz ehrlich, Ich habe etwas Bedenken, weil ich die noch\u00a0 nie gemacht habe \u2013 aber neugierig und mutig wie ich bin, wird das bestimmt ein gro\u00dfer Spa\u00df. Sehr oft werden die Teigtaschen mit Fleisch gef\u00fcllt, als Veggie entscheide ich mich f\u00fcr eine etwas vegetarische Version.<\/p>\n<p>Also los geht\u2019s:<\/p>\n<p>Ich mische 400 g Mehl, einen halben TL Salz und einen halben EL Sesam\u00f6l mit 200ml hei\u00dfem Wasser. Alles wird gut zusammen geknetet, bis ein fester Teig entsteht. Diesen lege ich dann 1 Stunde eingepackt in ein leicht feuchtes Tuch in den K\u00fchlschrank<\/p>\n<p>F\u00fcr die F\u00fclle werden 1 Jungzwiebel, 1 TL geriebener Ingwer, etwas Zitronengras, 3 Knoblauchzehen in einem EL \u00d6l glasig angebraten. Dann kommen 200g Wei\u00dfkohl und 150g Tofu dazu. Das Ganze wird mit 100 ml Wasser, 2 El Sojasauce und etwas Chili abgel\u00f6scht. Wenn alles sch\u00f6n weich ged\u00fcnstet ist, kommt alles in einem Mixbecher und wird zu einer feinen Masse mit dem P\u00fcrierstab zerkleinert.<\/p>\n<p>Der Teig wird nun so d\u00fcnn wie m\u00f6glich zu runden Teigplatten ausgerollt. Diese werden nun mit der Kohlmasse gef\u00fcllt und zu appetitlichen kleinen Paketen gefaltet.<\/p>\n<p>Die fertigen Teigtaschen werden nun in etwas \u00d6l angebraten. Wenn die goldbraun sind, gibt man 100 ml Wasser in die Pfanne und gibt sofort den Deckel drauf. Dadurch werden die Jiaozi leicht ged\u00e4mpft. Wenn das Wasser verdampft ist, sind die Teigtaschen fertig und sollten sofort hei\u00df gegessen werden.<\/p>\n<p>Dazu gibt es 3 Saucen: 1. Sojasauce, Sesam\u00f6l, Chili, 2.Sojasauce und ein aromatisiertes \u00d6l; ich nehme Mandarinen\u00f6l, 3. K\u00fcrbiskern\u00f6l, Apfelessig und etwas Sojasauce.<\/p>\n<p>Ich bin \u00fcberrascht, wie k\u00f6stlich sie geworden sind.
